I'd have to say that salad is one of my favourite foods. The possibilities are endless when it comes to these crunchy bowls of goodness.
You can keep it simple with lettuce, a few other veggies and dressing or turn it into a main by adding heartier veggies, plant or animal protein. Either way, salads can be extremely nourishing and satisfying especially when using quality ingredients.
This salad is one of my favourites, a go-to for dinners and potlucks and one that most people seem to like, especially kids! It's important to mix the dressing into the salad and allow it to marinade for at least 30 minutes. This helps to soften the kale improving the texture as well as "unlocking" the many nutrients within the leaves. This is an Autumn Harvest version but feel free to adapt it to the fruit & veggies of the season.
Autumn Harvest Kale Salad
1 large bunch Kale, remove ribs and chop into bite size pieces
1 apple, diced and cored
¾ cup candied walnuts (see recipe below)
½ cup pumpkin seeds, toasted
1⁄4 red onion – thinly sliced
¼ cup shredded Parmesan (optional)
1 cups raw walnuts
2 tablespoons maple syrup
½ teaspoon sea salt
3 Tbsp olive oil
2 Tbsp apple cider vinegar
1.5 Tbsp grated Parmesan cheese or nutritional yeast
1 tsp tamari sauce or coconut aminos
1 clove of garlic, crushed or ½ teaspoon garlic powder
Directions for walnuts:
*It's important to let the salad sit for at least 30min before serving. This allows the apple cider vinegar to break down the cellular walls of the kale, releasing a large array of nutrients that are more digestible and absorbable as well as soften the leaves*.
