I love a great potato salad especially in the summertime, it's the ultimate backyard, BBQ potluck dish. I thought I'd take this tried and true dish and put a little spin on it it. I love when a recipe idea turns into something delicious!
Sweet potatoes are a rich source of Beta Carotene, it's what gives them their rich orange color. Beta Carotene acts as an antioxidant in the body protecting the cells from harmful free radicals. Beta Carotene is also a precursor to Vitamin A which supports healthy skin, eye and lung health.
2 yams, diced
1/2 head broccoli or broccolini (cut small)
1/2 bunch flat leaf parsley, chopped
2-3 green onions, green & white parts, chopped
Salt & Pepper
1/4 cup olive oil
3 Tbsp apple cider vinegar
1 Tbsp mayo
1 tsp Dijon mustard
1 tsp maple syrup or honey
2 garlic cloves, minced
1 tsp cinnamon
1 tsp cumin
