Beef jerky is one of my all time favorite snack foods! It's relatively easy to make (in a dehydrator or oven), you can experiment with many different seasonings, it travels well and it's a high protein snack with highly absorbable nutrients like iron and zinc. When I make it at home, it usually doesn't last for very long, there's something very addictive about these salty, sweet & spicy, chewy, yet tender strips of beef that is so very satisfying!
I like to use a good quality cut of beef. A nice piece of grass fed, organic flank steak is my go to cut. Eye of round is also nice. You want to use a cut that has minimal fat as that can make your jerky go rancid :(
I like to slice against the grain of the meat as this yields a more tender (but still chewy) jerky. Freezing the meat for 1-2 hours before slicing will make it much easier to get an even and thin cut.
The great thing about beef jerky is that you can experiment with so many seasonings. This is a go-to recipe for me but feel free to get wild. Maybe a Mexican style jerky with lime, cumin and cilantro or something with an Asian flair using tamari, ginger and sesame. Feel free to try other meats like turkey, chicken, salmon, bison etc.
One thing I do recommend if you have the space...double the recipe. It'll be worth it!
1.5 - 2lbs beef (I like to use flank steak or eye of round)
3 Tbsp Tamari sauce (or soy or coconut aminos)
2 Tbsp Apple cider vinegar
2 Tbsp Worcestershire sauce
2 Tbsp coconut or maple sugar (or other sweetener)
1 tsp Liquid smoke (optional)
1 tsp sea salt
1 tsp ground black pepper
1 tsp garlic powder
1 tsp onion powder
chili flakes (optional)
