3 qualities I love in a meal: Simple, Nourishing, Delicious.
This soup has it all especially when using your own Fish Stock which has a multitude of health benefits and adds depth and flavor that you just can't get in a store bought stock. This is a lighter take on a classic soup. One of my faves!
2Tbsp unsalted butter or coconut oil
1 leek, thinly sliced, (white & pale green parts)
1 red onion, diced
3 small potatoes (russet or Yukon), or 1 yam, peeled and diced.
3 carrots, diced
1 cup frozen or fresh peas and or corn
6 cups of fish stock
5 garlic cloves, minced
3 sprigs of thyme or 2tsp dry
10oz skinless salmon, cut into cubes
Juice from 1 lemon
½ cup Cream or coconut milk (optional)
Fresh dill and/or parsley
Salt & pepper
