I know...another cabbage recipe! I can't help myself, I love the stuff! It's amazing how dense these things are, a little seriously goes a long way. And when I say dense I mean in volume / weight along with vitamins and minerals. Just look at all the colours in this dish! Talk about phyto-nutrients to the rescue. Also, a cabbage will last in your fridge for weeks so if you don't use it all, save some for another dish.
These versatile cruciferous veggies are packed with all the goodness that plant based foods bring into our lives. In our house we don't go a day without eating some sort of vegetable, and this happens at pretty much every meal. I thank my dear momma for cooking our veggies well when I was growing up. It's no wonder many people don't like vegetables, who wants, mushy, overcooked veggies? Not me. No thanks.
This dish is a favourite in our house. It's loaded, I mean loaded with some power house veggies; cabbage, carrots, cauliflower...the triple C trifecta comin' at ya! A little spice hear, a drop of vinegar there, ground beef for added protein and bam! Did I mention that this can be whipped up in under 30 minutes? A deconstructed "cabbage roll" stirfry without all the work of making cabbage rolls, which btw, I love but don't have that kind of time this weekend!
This is delicious served with a dollop of plain yogurt or sour cream and lacto-fermented sauerkraut. Enjoy!
Deconstructed Paleo "Cabbage Roll" Stirfry
2 tablespoons coconut or avocado oil
1 red onion, diced
2 garlic cloves, minced
1 bay leaf
1 pound ground beef
3/4 head medium - large cabbage, thinly sliced
1 carrot, shredded
3 cups grated cauliflower, grate with a food processor or grater
2.5 tablespoons apple cider vinegar
1 teaspoon dijon mustard
1 teaspoon sea salt
fresh cracked black pepper
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon onion powder
1/4 cup chopped flat leaf parsley
