Meatballs are a staple dish I often have kicking around in my freezer. They're perfect for those busy nights when I don't have time to prepare a full meal from scratch and as my son gets older those nights seem to be more frequent. I'll often double up on this batch, cook what I need for the evening then freeze the rest for several more meals or snacks. My boys seem to love them and everyone that's tried them has given them 2 thumbs up!
Over the last three years I've been purchasing beef from farms that raise pastured and grass fed cows. In our household meat is one of the foods that I feel strongly about buying the highest quality. It can be more costly but there are many other ways in which we save money, like meal planning!
Eaten in moderation and with other supportive foods (like greens and veggies) red meat can be very nutritious, especially grass fed meats which tends to be higher in vitamins A ,B and E, omega 3 fatty acids and absorbable iron and protein which are essential nutrients.
This recipe is also great for burger patties, when I double up on the batch I'll often make both, patties & meatballs. it's nice to have variety! Other vegetables that work well in these meatballs are grated carrot or beet, shredded kale and fresh herbs, another way to get veggies into mouths that aren't usually a big fan.
Try these meatballs with my Simple Marinara Sauce or drizzle some Lemon Tahini dressing over them.
Italian Meatballs makes approx 40 medium meatballs
3 free range eggs
½ medium red onion, finely minced
¼ cup finely diced bell pepper (red, yellow or orange)
¼ cup parsley, finely minced
¼ cup grated parmesan, optional
1½ tsp dijon mustard
2 tsp unrefined salt
½ tsp black pepper
1-2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
2.5 lbs grass fed ground beef (for extra flavour replace ½ lb with ground pork)
