I love having lots of good quality food & condiments in my fridge to make quick, easy, delicious and healthy meals & snacks. Sounds demanding? Well, it's really not :) Last night I made a delicious pesto which took me about 10 minutes to prepare from start to finish...maybe less! I'll be able to use this jar for at least 2-3 meals as long as I stop dipping my tortilla chips in it!
I'm going to be honest and say that this pesto is delicious...and guess what? It's SOOOO good for you. Talk about a nice hit of leafy greens to brighten up your day and provide much needed alkalizing in the body. Lots of great fats to even out your metabolism along with a long list of vitamins, minerals & enzymes to add a little pep to your step! Yes please, I'll take 2!
Kale & Basil Pesto
1 head of kale, trimmed from stem & broken into pieces
1 cup fresh basil
2 cloves of garlic (or more)
1/2 cup Parmesan cheese, grated
1/4 cup pine nuts (you can also use sunflower seeds or walnuts)
1/2 cup olive oil
juice & rind from 1 lemon
Salt n' Pepper to taste
Feel free to experiment with other foods & herbs like sundried tomatoes, olives, cilantro, parsley, dill...the list can go on.....A good place to start is to see what's in your fridge.
Place all ingredients except olive oil in food processor. Pulse a few times until food starts to break down. Add olive oil and process until it reaches a texture that you like. Keep in a glass jar or tupperware in the refrigerator. If you don't eat it all in 1 sitting it should keep for a few weeks.
There's lots of ways to serve pesto:
Saute with peas, mushrooms & onions and serve over spaghetti squash
Scrambled eggs or omelet
Chip or vegetable dip
Off the spoon :)
