Marshmallows are an occasional occurrence at our house, like Easter! The base contains only 4 ingredients and are a healthier alternative to conventional marshmallows which contain highly processed ingredients like corn syrup, refined sugars, preservatives, artificial colours and flavours. Non-foods I'd rather not feed my kid, his friends, myself, or anyone for that matter!
These marshmallows are light and fluffy and are also great for ROASTING!! Something we recently discovered, so I imagine I'll be making these for camping trips as well. Smore's anyone? Stay tuned for that one!
I'm going to be honest, these are quite easy to make but do require a lot of stirring and blending, so give yourself a good 30 minutes to make these, then they'll need setting time of about 1 - 3 hours. Trust me when I say that it's so worth it, you and the people you feed them to will love them!
This recipe is simply a base. Go nuts with flavours, textures, colours...whatever you're inspired to do. You can experiment with crushed nuts, toasted shredded coconut, cocoa powder, chai spice, cinnamon or ginger powder. Try flavouring with natural flavours like peppermint, lemon, orange and hazelnut. Give them some colour with turmeric, spirulina or beet powder. So many things to try!
1 cup water, divided
2½ tablespoons grass-fed beef gelatin
1 cup honey or maple syrup (or combination of both)
2 teaspoons vanilla
⅛ teaspoon unrefined sea salt
1-2 tablespoons arrowroot or tapioca powder
Standing or handheld mixer
8-inch x 8-inch baking tray or pan
