This delicious dish can be whipped up, cooked & served in under 30min. There's something to be said about the Mediterranean diet, filled with flavourful oils, fresh vegetables and seafood.
This is a favourite of mine, simple, nourishing, delicious. Serve it up with a rice pilaf, over top of spaghetti squash or maybe a kale salad. If you want to make extras for another meal, do all the steps except cooking. Seal it in a tupperware or container of choice and freeze for up to 3 months. Remember to label your goods in the freezer with date & description! It'll save you time in figuring out what these mysterious containers are!
2 lbs white fish filets (sole, tilapia, haddock, cod)
1 - 14oz can diced tomatoes or 4-5 medium fresh tomatoes, diced
1/4 cup olive oil
1 bell pepper, diced (orange, red or yellow)
1/4 cup black olives, chopped
3 Tbsp capers, with some of the juice
2 Tbsp artichoke hearts, chopped
2-3 garlic cloves, minced
1/4 cup fresh parsley, chopped
1 tsp dried thyme or 1 Tbsp of fresh
1 tsp dried oregano or 1 Tbsp of fresh
1/4 cup grated cheese (Parmesan, feta or both!)
Salt & pepper
