Happy moments for me are when I can feed my family a tasty, healthy & nutrient rich meal in under 1 hour. Even happier...under 30 minutes! Yes, now we're talking. I love hanging out in the kitchen but sometimes I've got other things to do so the less time spent cooking the better.
Here's a recipe that's super quick, easy to whip up and very satisfying, it seems to make an appearance on our weekly menu quite often!
3 tbsp coconut oil
1 pkg Broccoli Slaw or 3 cups thinly sliced, broccoli stems, cabbage & carrot
1 small red onion, thinly sliced
4 cloves garlic, minced
1 lb prawns or chicken (optional)
3 eggs, whisked (optional)
1 Tbsp fish sauce (optional)
3 Tbsp tamari or coconut aminos
1 Tbsp apple cider or rice wine vinegar
1/2 cup cilantro, chopped
3 stems green onion, chopped
1/4 cup sesame seeds
lime, quartered for serving
Heat a skillet on medium-high heat, add oil and heat. Toss in onions for a few minutes until soft. Add prawns or chicken, stirring occasionally until meat is almost cooked, 3-4min. Add garlic, cook for 1 min. Add broccoli slaw, fish sauce, tamari & apple cider vinegar. Stir well and cook until "noodles" are medium soft.
If you're using eggs, create a well in the center, slowly pour eggs in. Scramble until they are cooked then incorporate into the rest of the mixture. Stir well.
Toss in cilantro, green onion & sesame seeds.
Serve with a slice of lime.
