This dish has become a staple at our thanksgiving and Christmas dinners. Roasting the yam and cauliflower brings out the natural sweetness of the vegetables imparting a lovely sweet flavour in this light and fluffy mash.
I find that yams on their own can be quite heavy and sometimes even a little too sweet for my taste. The cauliflower really lightens it up while providing a huge array of phytonutrients from this super cruciferous vegetable. This dish is also delicious as a topping on Shephard's Pie!
Roasted Yam and Cauliflower Mash
2 tablespoons olive oil
1 large head cauliflower, cut into florets
2 medium yams, peeled and diced
1 red onion, chopped
6 garlic cloves, peeled and whole
½ teaspoon sea salt
¼ teaspoon black pepper
½ cup shredded Parmesan or 2 tablespoons nutritional yeast (optional)
¼ cup almond, coconut or plain milk
1 tablespoon butter or coconut oil
½ teaspoon onion powder
