Okay here it is...my all time favorite chicken dish! It's simple to prep, takes very few ingredients and is extremely flavorful, this dish is a winner in our household and also for many of the clients that I cook for!
Searing the chicken thighs with the bone & skin on (which offers more flavor and nutrients) is a sure way to release and seal those juices inside while getting a nice crispy skin. Chicken thighs are also a more affordable cut of chicken which I find to be the tastiest. The heat in the oven cooks the chicken thoroughly while caramelizing the onions and garlic. Perfect balance of sweet (onions), salty (tamari), spicy (chilis) and sour (apple cider vinegar) = delicious. Balancing flavors, quality of food and love that's put into a dish will all create a fabulous meal!
Sometimes it can be confusing when it comes to purchasing chicken; free range, free run, organic, conventional, etc...what does it all mean? In Canada there are no strict regulations when it comes to labeling meat (unless it has the "Certified Organic" label). Read more here for descriptions of meat labeling)....
This dish will serve 3-4 people and goes well with Krunchy Kale Salad. Double the recipe and freeze half for another meal!
Sesame Ginger Chicken
1 Tbsp coconut oil
6-8 chicken thighs, bone & skin on
Salt & pepper
1 large red onion, thinly sliced
1”pc ginger, grated (or 1 Tbsp ginger powder)
2-4 garlic cloves, minced
¼ cup tamari (or coconut aminos)
2 Tbsp apple cider vinegar
Dash of honey or maple syrup (optional)
¼ cup sesame seeds
Pinch of chili flakes (optional)
